Ingredients:
- 24 garlic cloves, peeled
- 1 cup of Mia Elia Extra Virgin Olive Oil
- 2-3 sprigs of fresh rosemary
- 2-3 sprigs of fresh thyme
- 1 teaspoon red pepper flakes
- Salt
Instructions:
- Prepare the garlic: Peel the garlic cloves. You can lightly crush them with the side of a knife to release their flavor.
- Heat the oil: In a small saucepan, add the garlic cloves and pour the olive oil over them. The oil should cover the garlic completely.
- Add the herbs and spices: Add the rosemary, thyme, red pepper flakes to the saucepan with the garlic and oil.
- Simmer: Place the saucepan over low heat. Let the mixture gently simmer for about 40-45 minutes, stirring occasionally. Be sure the oil does not bubble too much; you want a slow, gentle heat to infuse the flavors.
- Check the garlic: The garlic is ready when it turns golden and soft, almost spreadable. You should be able to easily mash a clove with a spoon.
- Cool and store: Once done, remove the pan from the heat and let it cool. Transfer the garlic confit and oil to a clean jar, making sure the garlic is fully submerged in oil. Seal and refrigerate.
- Serve: The garlic confit can be used as a spread on bread, mixed into pastas, added to roasted vegetables, or drizzled on salads.
