Ηere’s a recipe for a delicious Mediterranean-style fava bean dish, often referred to as “Fava Dip” or “Fava Spread.” This recipe is inspired by Greek cuisine and makes for a great appetizer or side dish.
Ingredients:
- 2 cups dried split yellow fava beans
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 4 cups water or vegetable broth
- 1/4 cup extra virgin Mia Elia olive oil
- Juice of 1 lemon
- Salt and pepper to taste
- Extra virgin olive oil (for drizzling)
- Capers and chopped red onion for garnish
Instructions:
- Rinse fava beans under cold water.
- In a pot, combine beans and water/broth. Boil, then simmer for 5 minutes, skimming foam.
- Add onion and garlic. Cover and simmer for 45-60 minutes until tender.
- Blend the mixture until smooth. Adjust consistency with water if needed.
- Stir in extra virgin Mia Elia olive oil, lemon juice, salt and pepper.
- Transfer to a dish, drizzle with more extra virgin Mia Elia olive oil , garnish with capers and the chopped onion.
- Serve with bread or better as part of a mezze platter and enjoy.
