Christmas cookies with Extra Virgine Olive Oil Mia Elia

Tasty Christmas cookies with extra virgin olive oil Mia Elia! It can be easily prepared, it is fasting and contains another trademark product of Mytilini, Ouzo!

Plus these cookies are vegan, which makes them the perfect treat if you’re a vegan or fasting!

Ingredients :

  • 500g self rising flour
  • 150g sugar
  • 1 tsp salt
  • 35g Ouzo
  • 1/3 tsp baking powder
  • 130g Extra Virgin Olive Oil MIA ELIA
  • 130g cup orange juice and & zest from 1 orange
  • 1 tsp ground cinnamon

Steps :

  • Step 1:

    To prepare these olive oil cookies add in a large bowl the orange juice and baking soda. Whisk lightly using a fork until the baking soda dissolves and starts foaming.

  • Step 2:

    In the same bowl add all the liquid ingredients (olive oil and ouzo) and the sugar and beat with a hand whisk until the sugar dissolves. Set aside.

  • Step 3:

    In another bowl add the dry ingredients: flour, salt, orange zest, ground cinnamon and clove. Mix with a spoon to combine.

  • Step 4:

    Add all the dry ingredients in the bowl with the liquid ingredients. Mix lightly with a spoon until all the ingredients incorporate. At the end use your hands to knead the dough softly until the flour is incorporated. Do not knead the dough too much because the oil will start to separate.

  • Step 5:

    Preheat the oven at 170-180C fan.

  • Step 6:

    Divide the dough in 28-30 equal balls, approx. 30-35g.

  • Step 7:

    Shape the cookies into circles.

  • Step 8:

    Place the cookies on 2 baking trays lined with parchment paper.

  • Step 9:

    Bake each tray for approx. 20-25 minutes until nicely coloured and cooked through.

  • Step 10:

    Remove from the oven and let them cool completely. Enjoy!
